Happy Healthy Hummus

Serves 6




Ingredients


• 1 x 400g can of chickpeas, drained and rinsed


• 1 garlic clove, minced


• 2 tbsp lemon juice


• 1 tsp olive oil


• 1/2 tsp ground cumin


• a pinch of ground black pepper


• a pinch of salt (optional)




Instructions:


1. Combine the ingredients in a blender or food processor and process until smooth


2. If you need more liquid to make a nice consistency, add a tablespoon of Greek style yogurt. Put in a bowl and cover


3. Place in the refrigerator to chill


4. Serve with pitta breads soldiers or as a veggie dip
